This month’s cover story from Time Magazine is all about fat (available June 23, 2014). In the storythey admit that everything we have been told about saturated fat being evil is essentially wrong. They also dispel myths about cholesterol and triglycerides and explain how taking out the fat made us increase our sugar and carbohydrate consumption. This in turn led to a rise in obesity and heart disease. While not mentioned in the article, the rise of autoimmune disease mirrors the rise of obesity in the USA. This makes me think that the dietary changes encouraged by the low fat era not only destroyed our health in general, but also influenced the higher occurance of autoimmune disease today.
